JUST Egg is a plant-based egg substitute that is primarily made out of mung beans. 

Sounds very odd, right?  Actually, despite its unique sounding name, it has been used in cooking for over several thousand years of human civilization.  

The mung bean is a small green protein rich legume that has several various health benefits.

Mung beans are packed with healthy nutrients.  

One cup or seven ounces of mung beans contains 14.2 grams of protein, 15.4 grams of fiber, and fulfills a good percentage of your RDI (Reference Daily Intake) of folate, manganese, magnesium, vitamin B1, phosphorus, Iron, potassium, and zinc.    

Mung Beans are also rich in essential amino acids, such as phenylalanine, leucine, isoleucine, valine, lysine, arginine, and more.  

Essential amino acids are those that your body cannot produce on its own.  

Furthermore, consuming mung beans can help reduce chronic disease risk because they are high in antioxidants.  

Research and several studies have shown that mung beans can lower “bad” LDL cholesterol.

Lastly, JUST Egg only requires 0.04 square meters of land to produce 1.5 oz.  Eggs and beef require 0.29 and 1.85 square meters of land, respectively.

So what does this all mean?

JUST Egg sold an equivalent of 30 million eggs as of March 13th, 2020.  This is equivalent to saving 4.4 million kg of CO2e, 7.3 million square meters of land, and around 1 billion gallons of water!
